Corn Fritters Recipe – Crispy on the edges, soft in the middle, and so delicious, these little cheesy corn cakes are so easy to put together and make a great side dish for a host of dinners! Feel free to use canned or frozen corn, but these corn fritters are especially good with fresh corn in the summer. Enjoy!

Ingredients list for theCorn Fritters Recipe
- 2 cups of corn
- 1/4 cup cornmeal
- 1/4 cup all-purpose flour
- 1 teaspoon smoked paprika
- 1 egg
- 1 green onion (chopped)
- 1/2 cup grated parmesan, or cheese of your choice
- 1 handful cilantro (chopped)
- 1 tablespoon lime juice
- Salt and fresh cracked pepper, to taste
- 1 tablespoonoil
- Sour or heavy cream, for garnish

Directions
1. Mix the corn, cornmeal, flour, paprika, egg, parmesan, green onion, cilantro, lime juice in a large bowl. Add some water if the mixture is too dry.
2. Heat 1 tablespoon oil in a pan. Spoon the corn mixture into the pan to form patties and cook until golden brown on both sides, about 4 minutes per side. Garnish with a dollop of cream. Enjoy! ❤️

Tips for the corn fritters recipe
- Add one more egg to the mix if you feel the corn patties are too dry and not holding well.
- For an extra burst of flavor, mix in some chopped jalapenos or diced red bell pepper to the corn mixture.

Fantastic! It started out sort of runny when I dropped the mixture into the frying pan but it browned and flipped nicely. I substituted chopped vidalia for the green onion and added 1T chopped jalapeno to the mixture. I made a red pepper roumalade sauce for dipping and it was OFF THE CHART! My husband said it was "restaurant quality" and he rarely compliments my cooking. Thank you for this wonderful recipe!Roumalade sauce:1 heaping T of mayo1 tsp lemon juice1 tsp Dijon mustard1 large roasted red pepper (from a jar, drained)Dash of garlic powder, red pepper, salt, pepper1 tsp horseradishMix together and refrigerate.

i ended up adding another egg because it wasnt holding at all and i was just frying corn, and i would add more cilantro and salt next time, was a bit bland my first try. but is yummy if you like corn.

I added about 1.5 T to mixture cause it looked a little dry. I pressed the patties in my burger press; they held beautiful. We loved them.
