What is Kraft Fresh Take? Well, sit down kiddos- I have a story to tell you. I kid. I kid. It's a bag of awesome. I am not kidding! Kraft is such a smart company and they have created this mix of cheese and breadcrumbs. What an easy way to make dinner! I am always

talking about how there isn't enough time in the day and if there's a way I can cut down on my hands on time- I am good with that. On to this delicious salad.

Act 1: The Pork

Step 1
· 3 lbs of pork (you can use picnic, butt, shoulder, stew meat, etc.)
· 3/4 cup co*ke
· 1/4 cup brown sugar
·
Step 2
· 1 cup co*ke
· 1/2 cup water
· 1 teaspoon garlic powder
· 1 teaspoon onion flaker/onion powder
· 1 teaspoon cumin
· 1 teaspoon smoked paprika
· 1/2 teaspoon chipotle flakes
Step 3
· 3/4 cup co*ke
· 3/4 cup brown sugar
· 1/2 teaspoon cumin
· 1/2 teaspoon smoked paprika
· 1 teaspoon garlic powder
· 1 4 ounce can diced green chiles
· 10 ounces mild red enchilada sauce

Step 1:
Place pork in a zip lock bag or a container you can seal and add co*ke and brown sugar. Allow the meat to marinate at least one hour or even better if you can let it marinate over night!

Step 2:

Add pork to crockpot and discard marinade.
Take everything listed under Step 2 and mix it together in a bowl and pour over the pork and then cover. Cook on high for three hours. You can leave either drain the sauce from the crockpot or leave it in there but at this point you shred the pork with two forks (I shred it in the crock rather than get another dish dirty). I like it extra saucy, so I leave it but some like it a bit drier.

Step 3:

Mix together the ingredients from step three. Pour sauce over your shredded pork. Cook 30 minutes longer.

If you are going to want rice or beans, this would be the time to make it!

I love cilantro lime rice and this is my recipe:

Cilantro Lime Rice
2 Tb. Butter pepper to taste
1 ¼ cup rice (I used long grain) juice

juice from 1 large or 2 small limes
2 ¼ cups vegetable broth (or chicken broth!)
2 Tbsp. chopped cilantro
¾ tsp. salt
¼ tsp. cumin

In a skillet melt butter with rice.Add liquid, and other ingredients (except cilantro and lime).Bring to a boil, reduce heat, cover and cook for 20 minutes or until rice is done. Once done, toss with cilantro and lime juice.
***I put it all in a rice cooker and waited until the rice was done to toss in the lime juice and cilantro. The flavor of cilantro diminishes when cooked***

Act 2: The Quesadilla

Large Burrito tortillas
Kraft Fresh Take 3 Cheese Southwest Cheese and breadcrumb mix.

I took the Kraft Fresh Take and mixed half the bread crumbs with all the cheese in a bowl.

Take the tortilla and cover it with cheese. Seriously. Go crazy. You can either make the quesadilla on your stove top with a large pan and heat it until the cheese melts and the bread crumbs become crispy or you can do this in the oven. I like the oven method. Preheat your oven to 350 and place your tortilla with cheese on a pan- pizza pan works GREAT for this! and heat about 4-5 minutes until the cheese is melted and bread crumbs are crispy.

Oh and don't eat it. Just yet. You will want to especially once the flavors hit your nose. You must be strong!

Act 3: The Salad.

You will need:

Pork.

Rice (if you want)

Beans (if you want)

Quesadilla

Lettuce

tomatoes

Salsa

green onion

cilantro

sour cream

avocado

guacamole

Whatever you want on your salad!

Assemble the salad!

Of course, quesadilla first. Then your toppins- I put it in this order: rice, beans, meat, lettuce and veggies of choosing and then top with salsa/guacamole/sour cream. Dig in!

This was so good. The bold flavors of the Kraft Fresh Take cheese mix and the crispy texture created a happy, happy taste explosion with the tangy rice, the sweet pork and the fresh produce.

I ate this ... twice.

Round two of this amazing and cheesy salad.

Now that spring has sprung and Easter is RIGHT around the corner. Wouldn't this make for a GREAT Easter lunch? I love a flavorful salad. Being in the southwest, we tend to break from the traditional path. When I was a kid, I love going on Easter egg hunts and eating grilled burgers at the church I attended. It was so much fun! I have to say, sadly, Emma has never gone on a real Easter Egg Hunt but her program has done a fun hunt around the program.
