Ingredients

  • 1 pkg HamBeens® 15 BEAN SOUP®

  • 8 (9-10 if you prefer a more "brothy" soup) cups water OR use chicken/beef/vegetable broth for added flavor.

  • 1 lb. smoked sausage, ground sausage (browned in pan before adding to pot), ham hocks or diced ham. Our favorite is to use a leftover hambone with some meat on it.

  • 1-2 cloves garlic, minced

  • 1 can diced tomatoes (14.5 oz.)

  • 1 tbsp. chili powder

  • Juice from 1 lemon

  • Optional: Hot sauce, salt and pepper to taste

Cooking Directions

  1. NO SOAK METHOD

  2. In a colander or sieve, rinse beans thoroughly. Sort and inspect for any unwanted debris and discard.

  3. Drain and pour beans in a slow cooker with 8 cups of stock/water, onions, garlic, and meat or hambone. (Not tomato or lemon juice yet!). Use 9-10 cups of liquid if you like a more "brothy" soup.

  4. Stir to combine. Set slow cooker on high and cook for 6-7 hours then check to make sure beans are tender. The soup can continue to simmer for several hours and will develop more flavor over time.

  5. After the beans are tender, remove the hambone. Chop or shred any ham that has fallen from the bone and add back to the pot. Stir in the can of diced tomatoes, our included Ham Flavor packet, optional chili powder, and the lemon juice.

  6. Cook for additional 30 minutes then keep warm until ready to serve.

  7. We recommend to serve with a freshly baked slice of corn bread! You can also serve over rice as well.

  8. Please keep in mind that every time the lid is opened, your cooking time will be longer.

Tips

For even more flavor, substitute beef, chicken or vegetable stock instead of water.

You can also try 1 lb. boneless chicken breasts or 1 lb. beef roast, then shred meat before Step 5 above.

As with all dry bean recipes, it's best to wait until AFTER the beans have become tender or fully cooked before adding any acidic ingredients like tomatoes, citrus, vinegars, etc.

You can add other vegetables like carrots & celery for even more flavor and nutrients

Remember that this is a NO SOAK recipe, but if you have already soaked the beans that's not a problem, just use 1 cup of water/stock less.

Variations on the recipe will work for almost all of Hurst's HamBeens items.

If you prefer a more "brothy" soup, add an extra cup of liquid when preparing

Set slow cooker on high and cook for 6-7 hours then check to make sure beans are tender. The soup can continue to simmer for several hours and will develop more flavor over time. After the beans are tender, remove the hambone. Chop or shred any ham that has fallen from the bone and add back to the pot.

Do beans have to be soaked before cooking in a crock pot? ›

Beans freeze beautifully! I freeze them in two-cup portions, which makes it easy to pull out just what I need for a recipe. With beans made in the slow cooker, pre-soaking them is far less important than with other cooking methods. The long cooking time means that those beans will definitely soften!

How do you thicken crock pot bean soup? ›

Add a little flour or cornstarch. Often a good idea to mix either with a little warm water in a small bowl, and the add to the soup. You can also add some cooked, cubed potatoes (canned will work), to thicken. Instant potato flakes will work, too.

How long does it take beans to get soft in crockpot? ›

Put beans into the slow cooker and add enough water to cover beans by 2 inches. Turn cooker to HIGH and cook beans until they're tender and cooked through, about 5-6 hours for unsoaked beans. (You can also cook the unsoaked beans on low, which would take about twice as long.) Drain beans.

Do you cook beans on high or low in a slow cooker? ›

Turn slow cooker on high and cook for at least 6 hours or up to 14 hours. Cooking time depends on your slow cooker. All crock-pots cook differently, but you can determine how long your beans need to cook by testing them. If they are soft and tender, they are done!

Can you overcook soup in a slow cooker? ›

Editor's Tip: Can you overcook soup in a slow cooker? It's a common question—and the short answer is yes. Ingredients like veggies, pasta and rice can get very mushy if left in the slow cooker too long. Many meats will toughen, too.

Which beans should not be cooked in a slow cooker? ›

Turns out cooking dried red kidney beans and cannellini beans in your slow cooker can make you sick. Find out how to eliminate the toxin that can make you ill and how to safely prepare and cook these commonly used legumes.

Why are my beans still hard after slow cooking? ›

Baking soda can help significantly since it increases the pH of the water, disintegrating that pectin and allowing beans to soften quicker. Baking soda also removes minerals from hard water, which can prevent beans from hydrating as quickly.

How long should you cook beans in a crock pot? ›

Place soaked beans in crock pot. Add any seasonings: salt and pepper, garlic, jalapenos, onions (to taste). Cover with water by about 2 inches. Cook on low for 8 hours or high for 6 hours.

How do you make 15 bean soup thicker? ›

In a separate bowl, dissolve a teaspoon or two of cornstarch or all-purpose flour in a small amount of cold water. Add the slurry to the bubbling soup. The soup should thicken up. Add more cornstarch or flour as needed until the soup reaches your desired consistency.

What is the difference between bean soup and soup beans? ›

Soup beans are not soup, but these slowly simmered beans are soupy, bathed in a rich, creamy, nutritious pot likker (or "pot liquor") that's inseparable from the beans themselves, sometimes literally. Each time you reheat soup beans, the beans get creamier, and their liquid gets thicker and more delicious.

What does cornstarch do to soup? ›

Cornstarch, or corn flour, can be used to thicken soup through its high starch content. Cornstarch is a great thickener for soup because only a little bit is needed to significantly thicken a soup, and it will not affect the flavor profile of the soup.

Is it safe to cook beans in a slow cooker? ›

But research now suggests that one tough ingredient shouldn't be cooked in the slow cooker at all — beans. All beans contain a compound called “phytohaemagglutinin,” also called PHA, or kidney bean lectin. Lectin is a type of protein that performs many functions in both plants and animals.

What happens if you don't soak beans long enough? ›

If you're the impatient, bean-hungry type, you can cook your beans from dry without any soaking at all. Here's the thing: Beans that have not been soaked ahead of time will always take longer to cook, but they will, indeed, cook.

What happens if you don't soak beans before cooking? ›

Modern cooking websites often say it doesn't matter. In a way, they're both right. Soaking beans can help improve the texture of the final product once the beans are cooked and reduce the gas produced when the food is being digested. But it isn't necessary to soak them.

How long can you leave soup in crockpot on low? ›

That varies by what's inside the slow cooker and also by the appliance's setting and model, the experts say. Most recipes for all-day cooking call for 6 to 8 hours on low. Quality- (and safety-) wise, another 1 to 2 hours in 'keep warm' mode won't mess things up.

How long is too long for slow cooker soup? ›

Recipes with meat like chili and pork shoulder are best when cooked for six hours minimum or up to ten hours. Vegetarian recipes are best cooked for around four hours, but can do a minimum of two hours or maximum of six hours (after which the vegetables start to get unpleasantly mushy).

Can you overcook bean soup? ›

Can you overcook beans in soup? Absolutely. If you cook the soup for too long, the beans will become mushy and potentially even lose their shape. If this happens, this is the biggest indicator that the beans have been overcooked.

How do you know when soup beans are done? ›

If the water level drops below the beans, add more water so the beans are covered at all times. The beans are done cooking when they're all tender; you can test this as they by smooshing a bean or two against the side of the pot with a fork — it should collapse easily, but not be mushy.
